Bonza Deli Department is a sandwich shop tucked away in Docklands, an area that has long struggled to attract the same food culture and foot traffic as Melbourne's more established dining precincts despite sitting right beside the CBD. That is exactly what makes Bonza such a pleasant surprise. Run by a chef with a fine dining background, this unassuming deli serves sandwiches that are genuinely worth making the trip for. From the moment you walk in, the colourful interior, warm lighting, and inviting café atmosphere make it clear that this is more than just a grab-and-go sandwich shop.

Dish Breakdown

What separates Bonza from many sandwich shops is the attention to detail. Almost everything is made in-house, from the sauces and pickles to the ferments that add depth throughout the menu. Their sandwiches are built on Japanese milk buns, which are soft, fluffy, lightly sweet, and perfectly toasted. Rather than being pressed flat, the sandwiches are finished on a grill, allowing the bread to maintain its pillowy texture while developing a golden exterior.

The Beef Brisket sandwich was the first to hit the table. Instead of shredded beef, Bonza uses thick slabs of brisket that retain both texture and moisture. Combined with American cheese, sauerkraut, pickles, and a special house sauce, it delivered a deeply savoury profile with plenty of richness. Importantly, the sauerkraut never overwhelmed the sandwich. Instead, it provided just enough acidity to cut through the beef and cheese, creating balance rather than dominance. Every component felt measured and intentional.

Next was the Fried Chicken sandwich, which immediately showed why it has become their bestseller. The chicken was thick, juicy, and remarkably crisp, with a well-seasoned coating that packed plenty of flavour. American cheese added richness, while the fermented chilli sauce brought gentle heat and complexity rather than simply spice. Fresh lettuce remained crisp throughout, contributing texture and freshness to every bite. It was indulgent but never heavy, showcasing the kind of restraint that often comes from chefs with fine dining experience.

The standout of the meal, however, was the Mushroom sandwich. As a vegetarian option, it would be easy to overlook, but it turned out to be my favourite sandwich and one of the best sandwiches I have eaten anywhere in Melbourne. Filled with whipped cheese, sweet onions, mushrooms, spinach, and their house-made mushroom XO sauce, it delivered incredible depth of flavour. The whipped cheese provided creaminess, while the onions added sweetness that complemented the earthiness of the mushrooms. The real star was the mushroom XO sauce — deeply savoury, intensely umami, and subtly sweet, it transformed an already excellent sandwich into something genuinely memorable.

The Setting

Bonza strikes the balance between neighbourhood café and modern deli. The space feels cosy, vibrant, and welcoming, with colourful touches that give it personality without feeling overly curated. The atmosphere is relaxed and approachable, whether you are grabbing lunch, catching up with friends, or stopping by for coffee or matcha. The team shares the same attention to detail seen in the food, creating an experience that feels genuine and hospitality-driven.

Value & Verdict

The quality of ingredients, level of execution, and care that goes into each sandwich make Bonza exceptional value. While Docklands may not be the first destination most Melburnians think of when planning a food outing, Bonza Deli Department provides a compelling reason to change that. Every sandwich was excellent, but the Fried Chicken and Mushroom sandwiches are genuinely worth seeking out. This is a place I would happily return to, and one that deserves far more attention than its location might suggest.
